I use PublishPDF myself, because, as you say, it is the simplest recipe.
What problems are you having with installing htmldoc?  Or is it simply
that you don't know where to start?

The PublishPDF recipe will be fine with Creole, because it doesn't
need to interpret PmWiki markup, since it works with the HTML after
PmWiki has processed the markup.
