Hi Dan

The only way you can install non-Apple-approved apps on an iPhone or 
iPod Touch is by "jailbreaking" them. This probably voids your warranty 
and has the possibility of turning your device into an expensive brick.

However, if you choose to go that route, purely for research purposes,
