Not at all, I think it should be quite simple to disable PmWiki's extras
(although I'd be glad to hear opinions/feedback from those who have been
doing the conversions). If someone doesn't want the new default layout,
$EnableStdLayout=0 will turn it off for you and you're left
with the familiar $PageHeaderFmt, $PageFooterFmt, $HandleBrowseFmt,
etc. variables that were there before.
The core pmwiki.php code did not change much with respect to layouts.
In fact, the new standard layout is itself based on the same
$PageHeaderFmt, $PageFooterFmt, etc., variables that have always been
in PmWiki. So, even with the standard layout enabled, changes to
$PageHeaderFmt, $PageFooterFmt, etc. continue to work, and an admin
can indeed create a completely different setup.
