You can set the variable $DiffKeepDays to be the maximum number of days
to hold revisions.  For example, setting $DiffKeepDays=15 in local.php
will cause all page revisions older than 15 days to be discarded when
a page is edited.

You can also take a look at 
   http://www.pmichaud.com/wiki/Cookbook/ExpireDiff
which provides a way to remove all of the page history from a page.
